Gelato is served at a slightly higher temperature as compared to ice cream. If we freeze gelato at low temperature, it will become hard but when it is warmer, it attains a soft consistency. Opposite to this, if we try to store ice cream at the same warmer temperature, ice cream would melt down leaving behind the water emulsion.
