Gelato is an Italian frozen dessert made with fresh ingredients such as sugar, regular milk and cream. It has a richer surface than other ice creams. The reason behind it is very simple. It uses more of regular milk than cream. Also, it contains very less air. It uses all the premium ingredients and it is considered “premium ice cream”. The ice cream you see in big glass top gelato display freezers is generally gelato. It comes in several gelato flavours.
Characteristics of Gelato:
1) Temperature
Gelato ice cream is produced at -10 to -12 degree Celsius temperature. With our gelato machine you can made it quicker i.e. in just 10 to 15 minutes.
2) Milk fat
Gelato has lower milk content i.e. around 5%. This is because it focuses more on using regular cream than whipped cream.
3) Overrun
Overrun i.e. the amount of air present in an item. In gelato, overrun is close to 0 and no air is present inside. This make gelato taste more intense and rich.
4) Production
For production, you need a gelato maker or gelato machine. The gelato machine mixes and freezes raw ingredients simultaneously. With in 10 to 15 minutes one batch is ready. After the batch is out it must be stored in a freezer or you can store it directly to gelato display freezer.
5) Storage and Serving
Gelato ice cream is made according to the requirements. It is stored in well-designed serialized freezers. Also, they are served while they are less frozen.
6) Churning
A Gelato is churned slowly. Slower churning makes the Gelato tastier and more flavorful as no air is mixed. due to which it results in having lesser volume and more density.
7) Texture
A Gelato Ice cream is lacteous/milky, yet have a very soft touch.
8) Various Flavours
Since Gelato is a rich ice cream and contains less air and more of milk. This makes its flavour more intense and texture smoother and creamier. While making gelato, traditional approach is used.
